"Helen Steer is waiting as the rest comes in. In a creased, billowing silk skirt and pointy green ballet shoes, she looks exactly the sort of person to whom you’d bring freshly-picked hops. As the bags of hops start piling up the smell becomes stronger. It’s fresh and citrusy, and I want to compare it to grass but that’s not right. I ask Steer how she would describe it. 'Skunk and condoms,' she says, without missing a beat."
